Eggplant caponata from the Armonico – Geraci line, prepared with Armonico extra virgin olive oil from Nocellara del Belìce monocultivar.

The recipe follows Sicilian tradition, with peeled tomatoes, eggplant fried in Geraci EVO oil, onion, olives, capers and celery.

The flavor is rich and dense, with a sweet and sour note provided by the capers.
