      Light fruitiness of green olive with hints of freshly mowed grass, ripe tomato and cooked vegetables. The taste is balanced, slightly spicy and tangy.

      It can be used raw on white meats, boiled shellfish and salmon, boiled potatoes, pasta and boiled rice. In cooking it accompanies the preparation of risottos, fish sauces and desserts.
