Medium fruity of green olive, fragrant and fresh, with hints of tomato, artichoke, leaves and grass, medium spicy taste and barely perceptible bitterness.
Excellent raw for preparing pinzimonio, as well as on legumes, meat, fish, cheeses and salads; in cooking, it is well suited for preparing sauces, roasts and fish baked in foil.

Usage tips
