It is a variation of the original caponata, prepared with artichokes instead of eggplant and supplemented with crispy celery, tomato and capers. The flavor is sweet and sour, perfect as a side dish for meat and fish or topping for bread, bruschetta, pasta dishes, focaccia and pizza.
