      Olives are harvested by hand, with cold extraction a few hours after harvest to maintain phenolic concentration to the maximum. Stored under nitrogen in steel silos and bottled in a short time, without decanting.

      The flavor is strong, with medium to high spiciness, mild bitterness, and scent of grass, artichoke, tomato, and leaf. Intense fruitiness and high fluidity.

      Suitable for raw seasoning of legumes, soups, cheeses, salads, on meat and fish. In cooking, it lends itself to the preparation of seasonal roasts, sauces and soups.

      The ceramic bottle contains EVO oil from Nocellara del Belìce, a variety grown in the Trapani area, hand-harvested and cold-pressed. The oil is stored in steel silos under nitrogen at a constant temperature of 15-18°C before bottling.

      Medium fruity of green olive, the flavor is medium spicy and slightly bitter, with hints of artichoke, leaf, grass and tomato.

      Raw, it accompanies soups, cheeses, legumes, meat, fish and salads. In cooking, it can be used on roasts or in the preparation of sauces, fish baked in foil, and pinzimonio.
