Manual harvesting of olives, cold extraction and storage under nitrogen in steel silos at a constant temperature of 15-18°C.

Medium fruity of green olive, fragrant and fresh, with hints of tomato, artichoke, leaves and grass, medium spicy taste and barely perceptible bitterness.

Excellent raw for preparing pinzimonio, as well as on legumes, meat, fish, cheeses and salads; in cooking, it is well suited for preparing sauces, roasts and fish baked in foil.

Organoleptic notes

Intense fruity aroma of freshly harvested green olive with hints of green grass and thistle, artichoke, remarkable fragrance and freshness. Medium-high pungency intensity and fresh raw fruit aroma.

Usage tips

Raw with legumes, soups, cheeses, salads, on cooked meat or sausage, or on braised meats. Ideal for making a bruschetta with homemade bread, tuma , anchovies and black olives (pane Cunsatu). In cooking in roasts, sauces or on seasonal soups.
