The organic oil is prepared from hand-picked olives, with cold extraction and storage in steel silos under nitrogen at an average temperature of 15-18°C.
Medium fruity green olive with hints of artichoke, grass, potato, raw almond and boiled green beans. The taste is medium spicy and balanced.
Excellent as a raw dressing for legumes, cheese, meat, fish and salads. In cooking, it lends itself well to the preparation of sauces and fish baked in foil. Ideal for pinzimonio.
